Recipe for picky toddlers

I don’t know if this is a Hispanic recipe but in my Cuban household, this was the go-to for the picky toddlers at lunchtime due to its decent calorie, protein and carb count but sometimes just a quick lunch or dinner for anyone.

When I was a toddler, I was a very picky eater. This is a quick, easy, savory recipe. I don’t know if this is a Hispanic recipe but in my Cuban household, this was the go-to for the picky toddlers at lunchtime due to its decent calorie, protein and carb count but sometimes just a quick lunch or dinner for anyone. Once made, the dish is intended to be destroyed and mixed thoroughly before eating.

Ingredients: 

  • 2 Eggs
  • 2 Cups of Water
  • 1/2 Onions
  • Shredded Cheese of Your Choice
  • 1 Cup of White Rice
  • Salt
  • Pepper

Directions:

1. Clean and rinse white rice. 
2. In a medium saucer boil white rice in water on high heat, when water begins to boil turn down to medium heat. Leave to cook until rice is tender.
3. In skillet crack two eggs
4. Cover egg yolks with choice of cheese and let eggs fry thoroughly. Cheese should melt over yolk.
5. Fry onion in a separate small skillet until brown. Sprinkle onion on eggs.
6. Serve cooked rice and lay fried eggs on top.
7. Add salt and pepper.
8. Enjoy!
